This queso has Jones Dairy Farm All Natural Pork Sausage, cooked until golden brown and crispy! It adds an extra layer of dynamic flavor, perfect to balance the heat from diced green chiles and creamy white cheese.

After browning the sausage, we add a little flour to soak up all the goodness in the pan. Pour in whole milk or half and half, throw in the white American cheese, season however you like, and let it all come together until you reach creamy queso perfection!
I like to top mine with cilantro, tomato, and jalapeño slices. But feel free to add shredded cheese, more pork sausage crumbles, diced chiles, or any other garnishes you like!

Queso is a super versatile dish. While I love this recipe as-is, it’s fun to try a few tweaks every now and again!
Looking for a more intense flavor profile? Feel free to add sharp cheddar to the base! It really amps up that amazing cheese flavor.
I personally love my queso on the drippier side, so I usually increase the amount of milk used in the base. Closer to a full cup gives me my perfect texture.
But if you’re a fan of thick, hearty queso, stick with a ½ cup of milk. Remember, it’ll thicken as it cools as well, so you can adjust the consistency to your liking.

Ingredients
– 1 pound Jones Dairy Farm Sausage
– 1 pound white American cheese, torn into pieces, or shredded
– ½ cup whole milk or half and half
– 1 can (4 ounces) diced green chilies, undrained
– 1 tablespoon all-purpose flour
– Salt and pepper, to taste
– Chips or other dip-able sides
– Garnishes of choice (cilantro, tomato, jalapeño, for me!)
Instructions
- In a saucepan over medium-low heat, add sausage and crumble with a spoon while cooking. Brown the sausage until crispy and cooked through, about 5 minutes
- Add the flour and stir. Cook for an additional 1-2 minutes
- Pour in the milk and stir to combine. Reduce the heat to low and allow the milk to heat slowly
- Add the cheese to the saucepan, stirring continuously until the cheese is fully melted and the mixture becomes smooth
- Mix in the diced green chilies into the queso, stirring well
- Season the queso with salt and pepper to taste. Adjust the seasonings as needed
- Continue to heat the queso on low, stirring regularly, until it reaches a creamy and desired consistency
- Once ready, transfer the queso to a serving bowl and serve warm with tortilla chips or your preferred dipping items
