If you have a gas range stove, I’d highly recommend briefly charring your tortillas before adding them to the sheet tray. This step is totally optional, but it adds an additional layer of flavor that I just can’t get enough of.
Ready for the finishing touches? My favorite garnishes are diced red onion, jalapeño slices, chopped cilantro, or a little avocado. The trickiest part is getting everything to balance on the tostada as you take your first bite!

Ingredients
Breakfast Tostadas
4 corn tortillas
1 cup refried black beans
1 cup shredded cheese
4 Chicken Sausage Pattys
4 eggs
Garnish
Red onion
Jalapeño
Cilantro
Avocado
Instructions
- Preheat the oven to 425-F.
- On a sheet tray, lay out the sausages and tortillas.
- Spread ¼ cup of refried beans on each tortilla, then sprinkle each with ¼ cup of cheese.
- Bake for 10 minutes until golden brown.
- While the tostadas and sausage are cooking, cook the eggs to your liking.
- Once tostadas are golden brown and crispy, top each one with a chicken sausage, an egg, and any garnish you like.
- Serve hot, and enjoy!
