I love it when a dish comes together looking elegant and fancy but couldn’t be easier. Have you ever made a galette? A galette recipe such a great way to turn something sweet or savory into a gorgeous sort of rustic pie. You can serve galette for breakfast, brunch, dinner, or dessert, and pair with greens for savory or ice cream if you’re going sweet!
You can make the crust from scratch if you choose, with a mixture of flour, butter, water, and salt- however, I like to use a sheet of puff pastry. I love the way puff pastry creates these crispy layers that provide the perfect crunchy balance to the softer fillings in the middle.
Today, I’m making a Sausage and Butternut Squash Galette, perfect for the holiday season. You can prep this ahead of time and serve later when guests arrive or prep it the night before and bake in the morning for an effortless holiday morning brunch. I like to serve mine with poached eggs and mixed greens, but you can serve up a slice with a cinnamon roll on the side too, I wouldn’t be upset with that plate passed my way.
The filling comes together easily. I’m spreading herbed goat cheese on rolled out puff pastry, and adding layers of sliced butternut squash, and dollops of Jones Dairy Farm All Natural Original Pork Sausage Roll.

To cut the butternut squash, I like to cut the top and bottom off to create a flat base. You can use a vegetable peeler or a sharp knife to cut away the outer layer of skin. Then, I slice the neck portion from the base, and cut the long portion in half. Then, I slice each half into thin half-moons. You can absolutely use a pre cubed squash here, but try to buy smaller pieces so that everything cooks evenly.
For this recipe, you’re going to need a few tools:
A baking sheet.
Parchment paper.
A rolling pin.
A spatula or knife for spreading.
A sharp knife.
You’re going to need these ingredients as well:
A roll of Jones Dairy Farm Original Pork Sausage.
Butternut Squash
Herbed Goat Cheese.
Puff Pastry.
Fresh Herbs.
Salt.
Oil.
Once you have all of your ingredients and tools ready, it’s time to assemble. Let’s dig in!
Sausage & Butternut Squash Galette
Description
This Sausage and Butternut Squash Galette is layered with herbed goat cheese, butternut squash, and Jones Dairy Farm All Natural Original Pork Sausage Roll, wrapped in fluffy puff pastry, baked till golden brown.
Ingredients
1 Roll Jones Dairy Farm All Natural Original Pork Sausage
1 sheet puff pastry, thawed
8 oz herbed goat cheese, softened or room temperature
2 cups butternut squash, thinly sliced
1 tsp olive oil
1 tsp fresh thyme
1 tsp sea salt
Instructions
- Preheat oven to 425 and line a baking sheet with parchment paper, set aside.
- Roll out puff pastry into a large rectangle, you want it to be about 2 inches longer on each side from rolling it out.
- Next, transfer puff pastry to the baking sheet. In the center, create a rectangle by spreading the goat cheese evenly, about 1 inch from each edge, almost like leaving a crust for pizza. Arrange slices of butternut squash evenly and add dollops of the Jones Dairy Farm Sausage on top.
- Fold the edges of the pastry over just the edges of the filling, and brush with olive oil. Sprinkle with sea salt and fresh thyme. Bake for 25-30 minutes until crust and sausage are golden brown.
5. Slice the galette into 6 large pieces and serve warm. I serve mine with poached eggs and mixed greens. Enjoy!
