When I’m hungry at the end of a busy day, I want something that can be ready fast but is still super tasty and satisfying. These easy cheesy chicken cutlets are one of my go-tos!

Tips and Tricks for the Best Chicken Cutlets with Cheese
Pounding the chicken may seem like an extra step, but trust me, it’s worth it. The chicken is way easier to cook when it’s all the same thickness. It only takes an additional minute or two, and it makes cooking the chicken way easier.
As for the cheese, I recommend sharp cheddar or parmesan. Both of these cheeses melt nicely without getting too greasy. This is important for getting that amazing crispy texture we want!
I also like to liberally season the egg mixture before coating the chicken. It sticks directly to the chicken breast, which really seals in the flavor. You’ll taste the seasoning in every bite.
Finally, don’t forget to drain the chicken just before serving to get rid of any excess oil. First, set your cooked chicken on a wire rack and allow it to cool completely. This will prevent condensation that could make the breading soggy.
Next, transfer the chicken to an airtight container and store in the fridge for 3-4 days. I recommend reheating in a pan or in the oven until the chicken is warmed through and the breading is re-crisped.

Ingredients
1lb chicken breast
1 cup bread crumbs (I like gluten free)
½ cup grated cheese, sharp cheddar or parmesan
1 egg
1 tsp garlic powder
1 tsp nutritional yeast
1 tsp salt
1 tsp pepper
½ cup olive oil
Instructions
- Lay the chicken on parchment paper and cover. Pound thin, about ½ an inch thick.
- In a bowl, add the egg and spices, then whisk together.
- Add the chicken and toss until the chicken is well-coated.
- In a bowl, mix together the bread crumbs and cheese, then dredge the wet chicken through this dry mix. Push in extra to get as much coating on the chicken as possible.
- Pan fry in olive oil over medium heat, about 7 minutes on the first side, and 5-6 minutes on the second side.
- Drain on a wire rack and season with salt.
