With the “Big Game” just a few weeks away, I have all things ranch on my mind. I want to dunk my carrots in it, drag my wings through it, drizzle my breakfast hash with it, and cover my salads in it. It’s just a solid staple in so many of our fridges, but if you haven’t made it from scratch, you’re missing out.
I think salad dressings sound intimidating sometimes, when in reality, you just dump a few things in a blender or food processor, let it go for a few seconds, and voila, you’re done. This Green Onion Ranch is nothing short of quick & easy, and is a play on a green goddess, but with the flair of ranch. I created this recipe for Perfectly Imperfect Produce last week with all of their organic scallions. We got rave reviews, and it’s always so exciting to see people recreating a recipe! I hope you love it, too!
Green Onion Ranch
serves 12
Ingredients
1/2 cup green onions, chopped
1/2 lemon, juiced
1/4 cup fresh parsley
1/4 cup fresh dill
1-2 small cloves garlic
1 tsp salt
1 tsp pepper
1 cup mayo, I used avocado oil mayo
1 cup milk, you can use unsweetened almond milk
Directions
1. In a blender or food processor, combine all ingredients and blend on medium-high, until incorporated and a pale shade of green.
2. If you like a little texture to your salad dressing, save a tablespoon of green onion pieces and stir into the blended dressing.
3. Serve over salads, grilled chicken, or use as a dip for veggies and chips.
