Jumpstart your morning with blueberry oat pancakes! They’re super fluffy and wonderfully hearty while the berries give them just the right amount of sweetness. Perfect for adding syrup, honey, and all your favorite toppings!
Why I Love This Recipe
Is it just me, or do pancakes give any meal serious weekend vibes? Whether it’s a Saturday or a Tuesday, these blueberry oat pancakes are the perfect way to energize your morning with cozy, delicious comfort!
I can’t get over how fluffy these pancakes are. They taste so fresh and light, but the oats and chia seeds add that secret boost of fiber that keeps you fuller for longer. It’s the most delicious way to power up your morning!
The only added sugar comes from the fresh blueberries, so the pancakes have a really nice balance of sweetness. It’s perfect for adding syrup or honey without overpowering your meal or making it too sweet.
Best of all, you’ll make these healthy, fiber-rich pancakes just like normal pancakes. Mix the batter, cook them up in a skillet, add your favorite toppings, and dig in. It’s my favorite way to infuse even the busiest mornings with a little bit of that weekend feeling!
Are Oats and Chia Seeds Good For You?
I love including oats and chia seeds because they make the pancakes taste so delightfully hearty. They will also keep you feeling satisfied for hours. Seriously, if you have a big day ahead, this is a great recipe to start your morning the right way!
Oats and chia seeds both add a big boost of fiber to the pancakes, which is what will keep you from getting hungry a few hours later. That’s a win in my book.
“Good for you” is a relative term depending on your dietary goals. But if you’re looking for recipes that will fill you up without spiking your blood sugar, then yes, oats and chia seeds are a great option!
Variations for Blueberry Oat and Chia Pancakes
They say breakfast is the most important meal of the day, right? All the more reason to play around with this recipe and make it perfect for YOU!
Want to add a little protein to jump start your day? Try mixing in 2 scoops of protein powder with an additional ¼ cup of milk to balance out the texture. You’ll get a lovely boost of energy, and your pancakes will still be lusciously smooth and delicious.
Not a fan of chia seeds? No problem! Feel free to omit them. I add them in because I love them and the extra nutrition they add to the recipe, but the pancakes will still be amazing without them.
Don’t love the texture of oats and chia seeds? Toss the batter in a blender until smooth, then stir in the blueberries before cooking in the skillet. This can be a fun variation for the recipe even if you do like the usual texture!
Have some leftover oatmeal you want to incorporate into this recipe? Leave out the chia seeds and oats, then add 2 cups of prepared oatmeal to the batter. It’s a great way to use up any extra oatmeal!
Want to mix it up with your mix-ins? I absolutely love blueberries in this recipe, but feel free to use another kind of berry, sliced bananas, or even chocolate chips if you really want to treat yourself!
What to Serve with Blueberry Pancakes
- California Sunrise Breakfast Sandwich — For that full-on brunch that includes all the best sweet and savory indulgences, this sandwich is an absolute must!
- Protein — Chicken sausage or bacon are my favorites.
- Pumpkin Spice Coffee Creamer — Enjoy all the flavors of fall in this healthier, more affordable alternative to anything you’ll find in the store.
- Toasted Coconut Coldbrew — Keep in mind that you need to start this one the night before, but believe me, it’s so worth it!
- Your favorite toppings — Syrup, honey, and a pad of butter are my favorites, but you can always throw a few more fresh berries and even some fresh whipped cream on top!
How to Store and Reheat Oat Pancakes with Blueberries
I love these pancakes because they’re so delicious and satisfying. But on top of that, they also freeze beautifully!
If you’re looking for some easy meal prep, whip up a double batch of these pancakes and then freeze half. I recommend letting them cool to room temperature, then layering the pancakes between sheets of parchment or wax paper in a freezer-safe gallon bag. They’ll keep in the freezer for several months.
When you’re ready to reheat them, just pop them in the toaster, throw them in the microwave, or toss them in a skillet on the stove! Heat until they’re warmed all the way through, add your favorite toppings, and enjoy.
