I don’t know about you, but whenever I read a brunch menu, I gravitate toward a biscuit sandwich. There’s something about the buttery layers of flakey biscuit, a crispy piece of bacon, fluffy egg, and a special sauce, that really sets my brunch dreams on fire.
I’m always in love with a classic, but what if we put a little spin on it at home? Take your favorite biscuit, add sweet and savory, some crispy, salty bacon, fluffy eggs, and we have the brunch sandwich to crown all sandwiches.
Today, we’re featuring Jones Dairy Farm Dry Aged, Center-Cut, Cherrywood Smoked Bacon. It’s dry aged for weeks, giving us that rich, bold flavor. It’s naturally smoked over real wood chips and has a slightly sweet flavor from the cherrywood! It’s delicious! Find it at a store near you, here.

“What temperature do you cook bacon in the oven?”
First things first, let’s talk about the best way to cook bacon!
I’m partial to baking bacon- it’s how we always did it in the restaurant. It’s the best way to minimize mess and maximize the crisp factor! I cover a baking sheet with parchment, arrange the bacon, and pop into a cold oven. Turn the heat to 400 degrees and bake till crispy, about 20 minutes will do.
- Here’s a list of tools you’ll need:
- baking sheet
- parchment paper
- a sharp knife
- a non-stick skillet
And now, to talk about the components. I love the balance of sweet and savory, and texture is so important too! Crispy bacon, fluffy biscuit, creamy cheese, and soft eggs give us a texture stack on deck!
- Here’s a list of ingredients you’ll need:
- biscuits
- raspberry jam
- Jones Dairy Farm Dry Aged, Center-Cut, Cherrywood Smoked Bacon
- Herbed cheese, like boursin or a goat cheese
- jalapeno slices
- scrambled eggs

“What do I do with bacon grease?”
To utilize the grease, you can make a warm bacon vinaigrette, my favorite recipe linked Here. You can also pour it into a cup or jar, and let it come to room temperature on the counter. You can then dispose of it, or store in the fridge and use to cook with! The flavor is delicious.

Ingredients
6 biscuits
1/3 cup raspberry jam
1/3 cup spreadable herbed cheese
1 jalapeno, sliced
1lb Jones Dairy Farm Dry Aged, Center-Cut, Cherrywood Smoked Bacon
4 eggs
Instructions
- Line baking sheet with parchment paper and arrange bacon. Place into cold oven, then turn the heat to 400 degrees. Bake for 20 minutes until bacon is crispy, then drain on paper towel.
- While bacon cooks, scramble eggs, and slice jalapeno. Cut biscuits in half.
- Arrange biscuits with a spread of jam, a few slices of jalapeño, a portion of eggs, crispy bacon, a schmear of the herbed cheese spread, and serve hot!
