My love for scones started when I lived in Ireland for 3 years as a child. Scones were a regular breakfast, and I’ve never been able to get enough of them since! Safe to say, I’m a big scone girl.

These sausage and cheddar scones are savory, buttery, and a beautiful way to start the day. The bites of melted white cheddar are gooey in the center while the pieces that run along the bottom of the dough get that toasted cheese flavor that takes them over the top! And the sausage is packed with classic herb taste so you get that familiar flavor in every bite.

To top it all off? The maple butter adds that perfect touch of sweetness to balance it all out! Plus, I just love how maple flavor pairs with the flavor of the sausage. It’s a match made in heaven!

Making Sausage Scones For Freezer or Post Partum Meals

One of my favorite parts about making scones is how well they freeze. I love making a whole bunch of dough at one time so I have scones to enjoy whenever I want!

You can freeze the finished scones, but I actually really like freezing the sliced dough portions before baking. That way, all you have to do is pop them in the oven, and they’ll be warm and ready to enjoy in just 15 minutes! How beautiful is that?

These are perfect to take to a friend post partum, either pre-baked or with the baking instructions, with a jar of the maple butter on the side. A lot of people bring entrees for post partum meals, but new parents need some delicious breakfast options, too! Pair with some cut up fruit for a truly special and thoughtful meal.

Whether you’re stocking up on post partum freezer meals or just love the idea of being able to have a delicious scone hot out of the oven whenever you want, sausage and cheddar scones always hit the spot. You’ll never regret having a few of these ready and waiting whenever the mood strikes!

Variations for This Sausage Scone Recipe

Don’t get me wrong, I love a classic plain scone or a yummy raisin scone. But adding a tasty combo of your current cravings is such a fun way to switch things up!

These sausage and cheddar scones are packed with big, savory flavor that feels so hearty and satisfying. Pork sausage is definitely the dominant flavor, but white cheddar knows how to pack a punch too.

If you’re looking for something lighter or want to go meat-free, you could omit the sausage and add your favorite fresh herbs instead. Rosemary, thyme, or oregano would all be wonderful options. You may also want to replace some or all of the white cheddar with a milder cheese like regular cheddar or parmesan.

Or you could switch up your protein! Bacon or ham would each add their own amazing twist of flavor and still give you that savory heartiness that makes any morning instantly more cozy. 

Maybe you want to try some chicken sausage? Corned beef? Chorizo? The possibilities are endless, and all of them will be delicious!

How to Store Sausage Scones

Once baked, you can store your scones in an airtight container in the refrigerator. I recommend enjoying them within 5 days or so… if they last that long! I like to pop mine in the oven until they’re warmed through.

As I mentioned earlier, cheddar and sausage scones also freeze beautifully. If you’re freezing baked scones, let them fully cool first, then wrap them in plastic wrap and store in a freezer-safe gallon bag. They’ll stay fresh for up to 6 months!

You can also freeze them unbaked, which is my preferred method. Shape the batter, then stick the scones in the freezer on a baking tray until frozen. After that, you can transfer them to a freezer-safe gallon bag until you’re ready to bake. No need to thaw before they go in the oven, just follow the instructions like usual!

Ingredients

Sausage & Cheddar Scones

1 cup  Pork Sausage Links, cooked & crumbled
8 oz sharp white cheddar, grated
1 cup AP Flour
½ cup Bread Flour (optional- you can use all AP)
1 egg
½ cup milk
5 tbsp cold butter, cut into small pieces
1 tbsp baking powder
1 tsp salt

Maple Butter

4 tbsp Salted Butter, Softened
3 tbsp Pure Maple Syrup


Instructions

  1. In a mixing bowl, combine the flour, salt, and baking powder.
  2. Using a pastry cutter, a fork, or your hands, mix the butter into the flour mixture, working quickly so the butter doesn’t melt.
  3. Whisk the egg into the milk, then add to the flour mixture with the crumbled sausage and shredded cheese. OPTIONAL – reserve a few bits of cheddar and sausage to top each scone before baking.
  4. Combine until a shaggy dough forms, then pour out onto the counter. Form a dough round with your hands, using an extra sprinkle of flour if things get messy.
  5. Cut the dough into 8 even triangles, and transfer to a baking sheet.
  6. Preheat the oven to 400F. While it heats, chill the scones in the freezer for 15 minutes.
  7. If you saved any cheddar and sausage bits, top each scone with a small amount. Bake for 15 minutes, until golden brown.
  8. Serve with maple butter (mix 3 parts maple syrup with 4 parts softened salted butter) and enjoy! Store in the fridge for up to 5 days.
