Hi Friends! If you know me like y’all do, you know I am not far away from a cup of iced coffee, either in a protein shake, as an afternoon pick-me-up, or just my favorite road trip essential.
& if you know that about me, you know I had gastric bypass a few years ago, which means coffee and a surgically smaller stomach aren’t always the best pair. Extra acid in anything? Hard Pass.
However, in February of 2017, Tiemans Coffee reached out to me and asked if I’d be willing to try their Low Acid Coffee line and share my thoughts. I haven’t looked back since.
Tieman’s is loading up their coffee with tons of antioxidants from Matcha, Rooibos, & Goji! A cup of their coffee is packed with enough antioxidants to match 4 servings of blueberries! The taste is delicious, and my favorite is the Dark & the Decaf. It’s what I use in my Cold Brew, and both turn out equally great!
You might have heard about Cold Brew, and if you haven’t tried it, you’re probably wondering why people are obsessed, and also why is it $4 at the coffee shop?! Cold brew is the slow steeping of ground coffee in cold liquid for many hours to develop that rich, dark, coffee flavor. CB is also said to be 67% less acidic than hot coffee due to the elimination of certain oils that won’t dissolve at colder temperatures. I can’t tell you how shockingly easy & affordable it is to make at home. Pair a low acid brewing method with a delicious low acid bean, match made in heaven. Let’s do it!
First of all, you’re going to need a large container, you can find mine here.
-also, a cheesecloth (no), OR, my favorite thing ever (yes), a Nut Milk Bag. (I know, but it’s actually called that, and I use them to make almond milk too. (code Aubrey10 saves you 10% also!)
Cold Brew:
1 Bag of Ground Tieman’s Coffee.
1 Large container- at least 1.5 gallons
1 nut milk bag
1.5 Gallons of Water.
Instructions:
1. Pour Ground Tieman’s Coffee in Nut Milk Bag and pull string tight to close. Add the bag to your large vessel, and add 1.5 Gallons of Cold Water. Steep in Fridge for 12-24 Hours.
(this is how it will look as soon as you fill it up, lightly taking on color, coffee should be submerged in water!)
2. After the cold brew has had ample time to steep, remove bag full of grounds and discard the beans, dishwash the nut milk bag for future uses!
3. Now, you can either keep your Cold Brew at this strong level, or add water to the top of the container to create a more mild flavor- which is what I do. This will last in my house about 10 -14 days.
(here’s the dark color after the coffee steeped for 24 hours).
I know, seriously, I KNOW. SO EASY. Also, so easy when you have a few of the right tools. You’re kicking yourself for not doing this at home sooner, aren’t you!?
OK BUT ALSO, I hear you, some of you are in college, or have 5 kids and don’t have room for this pitcher in your fridge! No problem! I make a small batch in my French Press.
French Press Cold Brew Method:
Add 3 heaping scoops of Tieman’s Coffee to bottom of French press, cover with water, let stand in fridge overnight. When ready to use, Press the filter down as usual, filtering the coffee from the beans, and you’re good to go!
Now, for the fun recipe. I’m calling you all out, you PSL lovers, you! I am one of them! But, after bariatric surgery, that amount of sugar makes me want to crawl inside a hole and die, SO, I got creative this year. You’re gonna LOVE THIS. This recipe is SUGAR FREE, and won’t cost you $5 at the drive through every day!
Tieman’s Low Acid Cold Brew Pumpkin Spice Latte.
6 cups of our homemade Cold Brew.
1 cup plain pumpkin puree. (NOT pumpkin pie filling, and read your labels, there should be one ingredient- pumpkin.)
1 cup of your favorite dairy free creamer- I used a French Vanilla Nutpod.
1 heaping teaspoon each, ground cinnamon, & pumpkin pie spice
*OPTIONAL* Sweetner like stevia, maple syrup, etc. I didn’t sweeten because I don’t like anything sweet, so taste as you go!
Instructions:
1. Blend all ingredients!
2. Pour into a Container, like this one I found on Amazon & stick it in your fridge!
3. Drink it before your significant other figures out how delicious it is. Truly, this made it 3 days in our house, I’m making another batch tonight.
*Also, it would be amazing heated up on the stove, or even in the microwave- you do you!
