Quick & Easy Dressings.

Processed with VSCO with av4 presetIt’s no secret I’m obsessed with my Vitamix. I use it daily to blend up coffee, make soup, smoothies, and a weekly batch of homemade salad dressing.

Salad dressings come together super quickly, don’t have to be complicated, and the homemade versions taste 10x’s better than anything you buy at the store, I promise.

Here’s two very simple dressings- a balsamic vinaigrette, Italian, and if you click here, you can find my recipe for green goddess ranch! Hope you love them as much as I do!

Weekday Balsamic Vinaigrette
Makes 3 servings
1/4 cup balsamic vinegar
1/4 cup avocado or olive oil
1 tablespoon spicy mustard
1/2 tsp red chili flake
1 tsp honey (optional)

Processed with VSCO with av4 presetAdd all ingredients to 8oz blending bowl and blend on 3 until dressing becomes thick and creamy. Pour into three small serving cups and use for lunches this week. You can drizzle over salad, add to mayo and shredded chicken for balsamic chicken salad, or toss over roasted veggies like Brussels Sprouts and Butternut Squash!

1 tablespoon dried oregano
1 tablespoon honey (optional)
