Hey Friends! How is it August already!? I am NOT ready for summer to come to an end, I seriously feel like a stage 5 clinger when summer rolls out of play, always calling and texting but summer doesn’t respond. ugh. when will I learn?!
But, when it’s this hot outside, I’m looking for any excuse to ditch my stove and work with some healthy cold recipes, and insert Overnight Oats.
I’m such a sucker for these quick & easy go-to dishes, and these oats are doin’ all the work while you sleep! How perfect is that!?
Also, after bariatric surgery, dairy isn’t always my friend. A few years ago I made the switch from animal milk, to nut milk, and haven’t looked back. Ajoyo Almondmilk is kind on my tummy, and also great in calorie content. Today’s recipes feature Ajoyo unsweetened plain, and the chocolate almondmilk flavors, both of which I really enjoy. With that being said, I created two quick overnight-oats recipes that are perfect for the end of summer. One is perfect for breakfast, and the other is perfect for that late night sweet treat! I hope you make them and let me know what you think!
Peaches & Almond Cream Overnight Oats.
Ingredients:
1/2 cup rolled oats
1/2 cup Ajoyo Unsweetened Almondmilk
1/2 cup fresh peaches, diced
Toppings of your choice- I used bee pollen, sliced almonds, and more peaches.
Directions:
1.Mix oats, almondmilk, & diced peaches in a container, and let sit covered in the fridge overnight. This allows the oats to absorb the liquid, and will become soft and creamy!
2. Enjoy these for breakfast on the go, or top with whatever you have on deck! I suggest some almond butter, more fruit, or even a sprinkle of crunchy granola! You cannot go wrong! Enjoy!
Now, let’s switch gears and think DESSERT.
I am such a sucker for chocolate, and if I didn’t want to just chug a tall glass of this creamy deliciousness, adding it to a bowl of oats was just the right idea!
The Chocolate King Overnight Oats
Ingredients:
1/2 cup rolled oats
1/2 cup Ajoyo Chocolate Almondmilk
Toppings of your choice- I used half a sliced banana, 1 tablespoon peanut butter, and a sprinkle of my favorite dark chocolate!
Directions:
1. Mix oats & almondmilk and allow to sit covered in the refrigerator overnight.
2. When ready to eat, top with your favorite toppings and enjoy this sweet treat!
