I’m really rushing warm weather over here. I know!! Between being in the Florida sunshine and making summer plans, I’m craving frozen sweet treats and sun kissed skin!
Y’all know me. I don’t mess with high sugar desserts. Not because they aren’t magical and perfect, but post bariatric surgery, sugar just isn’t a friend anymore. I try to keep my sweet bites under 10g of sugar, and usually fruit based!
I’m also a huge fan of sneaking some protein in anywhere I can! I used my favorite Vital Proteins Banana Cinnamon Collagen Whey, and blending a few scoops with some ripe bananas made the perfectly sweet, nice cream texture!
If you’re dreading all the Easter Candy about to be lying around, make a batch of these and mail me a thank you note! Haha!
Also- you could make these bites in a large pie pan and cut into slices for a dinner party or what not, but I’m huge on portion control, so using a silicon muffin tin was perfection for me! Did I mention these are blend and freeze?! No baking required! So here’s how I did it!
Banana Protein Nice Cream Bites//
Blend 1 11oz bag (or 1.5 cups) of your favorite low sugar granola with 1/4 cup melted coconut oil until the granola becomes granular and forms small pieces. (I use the Kind brand- cinnamon). This makes your crust! Press an even amount of crust into the bottom of each muffin bite, and freeze for 10 minutes!
Next comes the filling! While the crust is in the freezer setting up, you’re going to blend 2 ripe bananas with 1/4 cup melted coconut oil, 1/4 cup coconut butter, and 4 scoops of Vital Proteins Banana Cinnamon Collagen Whey, until smooth and creamy! It’s going to be really THICK. Which means, super creamy when frozen! I was also thinking how good this “banana collagen butter” would be spread on apples, toast, or as a frosting! So GOOD. Anyways- now that I’m drooling…. scoop an even amount of the filling into the crust based molds, top a few with some sliced banana if you have any extra, and freeze for 30 minutes.
You can eat them as is, or you can get crazy and drizzle some melted dark chocolate on top. I think we all know which option I went with! I sprinkled the melted chocolate with some sea salt and these bites were DELICIOUS. I let them set in the freezer for an additional 10 minutes after the chocolate has been applied, and then store them in a large ziplock, grabbing them for a breakfast on the go, or a late night snack!
