Ingredients

4 sweet potatoes, washed
2 cups Instant Pot Burrito Style Shredded Chicken
½ cup Greek yogurt
1/3 cup sliced cherry tomatoes
¼ cup sliced jalapeño
¼ cup cilantro


Instructions

  1. Preheat the oven to 400F
  2. Roast the sweet potatoes 45-60 minutes, until fork tender
  3. Split the sweet potatoes with a knife
  4. Stuff with warm shredded chicken, then top evenly with yogurt, tomatoes, jalapeños, and cilantro
