It’s no secret that I’m a big fan of pizza. But when I don’t feel like making a whole pie, these chicken parmesan bites are a quick and easy way to satisfy all my cravings for Italian-inspired goodness!

Store-bought puff pastry is layered with red sauce, crispy chicken cutlets, and fresh mozzarella, then baked to crispy, gooey perfection. Every bite is like your own mini chicken parmesan pizza!

I love whipping up this recipe when I want a quick snack, or you can serve it with a tossed salad for a full entree. And if you’re having friends or guests over, chicken parmesan puff pastry makes a phenomenal appetizer. Just don’t be surprised if you turn around to find the whole platter empty.

Anytime you’re in the mood for finger food, chicken parm bites always hit the spot. And with only 10 minutes of prep time, they’re a great low-maintenance recipe to keep in your back pocket! 

What Ingredients Should You Use

For ease and convenience, I always use store bought puff pastry. It saves so much time, plus it’s easy to find in any grocery store.

For the chicken, I absolutely LOVE making this recipe whenever I have leftover cheesy chicken cutlets! The crispy breading complements the puff pastry and gooey cheese beautifully. 

If you don’t have crispy chicken, cooked chicken of any kind will work as well. You’ll still get great texture from the puff pastry.

When it comes to sauce, you know I always have a jar of my red pizza sauce ready to go in the fridge. If you don’t have any on hand, it only takes 5 minutes to come together! You’re also welcome to use any other kind of red sauce you have in your pantry or fridge.

Finally, for the mozzarella, I always recommend going fresh. It adds so much amazing, gooey texture. And don’t forget the parsley and fresh grated parmesan on top!

Variations for Chicken Parm Bites

This tasty finger food is super customizable. You’re welcome to swap out ingredients based on your preferences, or you can make a whole batch of different versions and enjoy the variety!

If you don’t have any chicken on hand, feel free to add pepperoni, cooked sausage, bacon, or any savory protein. For a meat-free option, try chopped veggies like bell peppers or red onion.

Craving big flavor? Swap out the red pizza sauce for the hot honey variation! You could also use pesto sauce for a totally different experience.

Love a classic margarita pizza? Replace the parsley with fresh chopped basil instead to add that signature earthy flavor.

If you like a little spice, feel free to sprinkle some red chili flakes on top. You could also add a drizzle of buffalo sauce to dial up that heat!

How to Store and Reheat Chicken Parmesan Bites

Puff pastry is best served fresh and hot out of the oven. That being said, if you do have a few bites left over, don’t let them go to waste!

Once they’ve cooled to room temperature, store the chicken parm puff pastry squares in an airtight container in the refrigerator and enjoy within 3-4 days. I recommend reheating in the oven as the microwave could make them soggy.

Ingredients

Scale

1 sheet puff pastry, rolled out
½ lb Cheesy Chicken Cutlet, sliced
½ cup Pizza Red Sauce or jarred marinara
½ cup fresh mozzarella
Salt and pepper to taste
Fresh parsley and parmesan to top


Instructions

  1. Preheat the oven to 375-F. Line a baking sheet with parchment paper
  2. Cut the puff pastry into 12 squares and transfer to the prepared baking sheet
  3. Add a small spoonful of red sauce to each square
  4. Top each square with sliced chicken cutlet and mozzarella
  5. Bake at 375 degrees F for 25 minutes
  6. Top with chopped parsley, fresh grated parmesan, and salt and pepper
