Apple Pie Oats

30e0a2f3-f391-4841-9249-1b21b176d5c0Happy New Year, Friends! Hoping you and yours had a wonderful holiday season, and now that it’s 2019, I’m ready to get back into the swing of things, back to the routine, and what better way to start than with breakfast.

If you’re like me, you grew up eating instant oatmeal, and there’s something so nostalgic about smelling warm cinnamon and apples together in some oats. I worked with Perfectly Imperfect Produce on this recipe to create a super easy at home version, with minimal added sugar, and it’s just as easy as ripping open the envelope, I swear!

I’m adding a little bit of maple syrup, but if you prefer zero added sugar, feel free to omit, as the apples are sweet! I’m also using instant oats, so if you have plain rolled, please allow a little additional cooking time, according to the package!

Apple Pie Oats.
serves 2-3
Ingredients
2 small-medium organic Apples, diced
1 cup organic unsweetened almond milk
1 cup water
1 cup instant oats
1 tsp cinnamon
1 tsp salt
2-3 tablespoons pure maple syrup

Directions
1. In a sauce pot, bring water, almond milk, diced apples, maple syrup, and cinnamon to a boil. Cook for 2 minutes.
2. Add oats and salt, stir, remove from heat, and cover with a lid for 1-2 minutes, until oats are thickened and cooked through.
3. Serve with a drizzle of maple syrup on top, a sprinkle of cinnamon, and either a dollop of yogurt or whipped cream. You can eat right away, or store in servings to reheat throughout the week. I have doubled this recipe to make for a work week, and it reheats really well!

Hope you try this recipe at home, and be sure to tag me on instagram, @thatswhatsheeats, so I can keep up with your foodie journey! Happy New Year!
