Salad dressings come together super quickly, don’t have to be complicated, and the homemade versions taste 10x’s better than anything you buy at the store, I promise.
Here’s two very simple dressings- a balsamic vinaigrette, Italian, and if you click here, you can find my recipe for green goddess ranch! Hope you love them as much as I do!
Weekday Balsamic Vinaigrette
Makes 3 servings
1/4 cup balsamic vinegar
1/4 cup avocado or olive oil
1 tablespoon spicy mustard
1/2 tsp red chili flake
1 tsp honey (optional)
Italian Dressing
Makes 6 Servings
1/3 cup red wine vinegar
1/2 cup light, flavorless oil, like sunflower, canola, veggie, etc.
1 tablespoon garlic powder
1 tablespoon dried oregano
1 tablespoon honey (optional)
1 tsp red chili flake
1 tsp each, salt & pepper
All all ingredients to 20oz cup and blend on 3 until dressing becomes thick and creamy. Store as is in refrigerator, or add 1/3 cup dressing to the following salad….
Italian Quinoa Salad
1 cup cooked quinoa
1/2 cup diced cucumber
1/2 cup grape tomatoes, halved
1/4 cup diced red onion
1/4 cup fresh herbs, chopped
1/4 cup olives, halved
1/3 cup Italian Dressing
Combine all ingredients and serve with roasted chicken, over mixed greens, or eat as is. Keeps for 3-4 days.
