Ingredients
– 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
– 1 pound penne pasta
– 1 package Jones Dairy Farm Canadian Bacon, diced (reserve 2 slices if you make the crispy topping)
– 2 cups shredded Swiss cheese (1 additional cup if you make the crispy topping)
– 4 cups chicken broth
– 1 cup milk
– 2 cloves garlic, smashed
– 2 tablespoons Dijon mustard
– 2 tablespoons olive oil
– 1 teaspoon garlic powder
-1 cup peas
– Salt and pepper to taste
– Fresh parsley for garnish
Instructions
- In a large pot, add olive oil over medium heat.
- Add chicken pieces to the pot and cook until browned on all sides.
- Stir in diced Canadian bacon, garlic, Dijon mustard, salt, garlic powder, and pepper. Cook for an additional 2 minutes.
- Pour in chicken broth, milk, and bring the mixture to a simmer.
- Add pasta and cook covered for 8 minutes. Uncover and cook for an additional 2 minutes or until done to your liking.
- Optional: Spread 1 cup of shredded cheese on a baking sheet and sprinkle ? cup diced Canadian bacon over the top. Bake at 400F until golden brown, about 5-8 minutes. Set aside to cool.
- Once the pasta is cooked, stir in the cheese until melted and creamy.
