Caprese chicken sandwiches are nothing short of summertime delight! Youβll love the fresh combo of buttery cheese, fresh basil, and tomatoes while grilled chicken takes the classic caprese flavors to a whole new level.

1 cup Rustic Basil Pesto
4 ciabatta rolls
4 chicken breasts
1 cup mayo
2–3 heirloom tomatoes, sliced
8 oz fresh mozzarella, sliced
4–8 large leaves of fresh basil
2 tbsp olive oil
Salt & pepper to taste
Instructions
- Preheat the grill to high heat. Mix chicken breasts with Β½ cup Basil Pesto, 1 tbsp olive oil, and salt and pepper. Let marinate for 15 minutes.
- While the grill is heating, slice tomato, mozzarella, and ciabatta. Season the tomatoes and mozzarella with salt, pepper, and remaining olive oil. Set aside.
- Make the aioli by combining mayo with remaining pesto.
- Grill chicken breasts over medium-high flame for beautiful grill marks, about 5 minutes per side, until the internal temperature reaches165F. Remove from the grill and let rest for 10 minutes.
- Quickly grill the ciabatta for 1-2 minutes until char marks appear.
- Assemble the sandwich! Spread an even amount of Pesto Aioli on each side of the bread, then add the chicken, tomatoes, mozzarella, and fresh basil. Serve while warm!
