The Perfect Low-Sugar Protein Bar.

I’m a hoarder of protein bars, I keep them in the fridge, in the snack drawer, and in my car for those moments when you’re stuck in traffic and you’re getting hangry!
I love a lot of different brands and flavors, but wanted to make my own at home and they turned out perfectly! I know a lot of my followers are WLS patients, and that means we consume a lot less sugar than the rest of the world. I wanted to create a weight loss surgery friendly recipe for a soft protein bar, but it had to be delicious, of course! I used a few ingredients from the pantry, and let them set up over night! Hope you try these out, and love them, too!

I used my favorite protein powder, the Vital Proteins Vanilla & Coconut Water Collagen Whey to add protein to these bars! This Blog is done in partnership with Vital Proteins! All opinions and recipes are my own.

Vanilla Blueberry Almond Bars
Serves 10

2 cups unsweetened Almond Butter
1/4 cup melted coconut Oil
1/4 cup fresh berries- I used blueberries
8 scoops of Vital Proteins Vanilla & Coconut Water Collagen Whey
Combine Almond Butter, coconut oil, and whey with a handmixer until dough forms, should be sticky, but firm.
2. Stir in blueberries with a spatula.
3. Pour into a 9X9 baking dish, lined with parchment paper, and smooth down. Add some additional blueberries to the top if you have them! Chill over night.
4. Cut into 10 strips, and wrap individually with plastic wrap. These will last about 7-10 days, and freeze well. Enjoy!
