Ever since my weight loss surgery in 2014, I haven’t been able to find a frozen sweet treat that doesn’t upset my stomach. Whether they be sugar free with replacement sweeteners, or low sugar in general, nothing seems to work. I usually go all out on an ice cream cone once a summer, but always hate myself 30 minutes later- still worth it though haha.
But! I DID IT!
I finally mastered a delicious and easy popsicle that is perfect for post WLS patients, and anyone else who is on a healthy journey!
Today I’m using the Vital Proteins Collagen Beauty Water in Strawberry Lemon. I simply blended two scoops with two cups of water, poured over some fresh berries in popsicle molds, and froze. I love using this brand because there’s no added sweeteners, fillers, or additives, and it’s really delicious! The Beauty Water promotes healthy hair, skin, and nails, and healthy digestion for gut health. Vital Proteins is hands down, the best thing I’ve added to my nutrition plan over the last year, and I absolutely see the benefits in my skin alone.
These Popsicles make a great snack, dessert, or even an ice cube for your favorite seltzer water or vodka soda cocktail! They also look perfect for the Fourth of July, so get your freeze on! (Popsicle molds came from target!)
Strawberry Collagen Berry Pops.
6 servings.
Ingredients
1.5 cups of water (I’ve used a sparkling water, and still water. Sparkling water of course gets extra frothy, so you may want to let the bubbles settle before pouring!)
2 scoops Vital Proteins Strawberry Lemon Beauty Water
6 strawberries, sliced
1/4 cup blueberries
Directions
1. In popsicle molds, add an even amount of sliced strawberries and blueberries to each mold cup.
2. Blend water & collagen together until combined. Pour over berries in molds to fill line, add sticks & lids and freeze for at least 3 hours!
3. Eat as is, or add to your favorite beverage for a mocktail cocktail ice cube! Enjoy!
