I don’t know about you, but I am always in a banana mood! This is my second recipe featuring Vital Proteins Banana Cinnamon Collagen Whey because I am so in L O V E !

This tub is full of animal collagen, and healthy whey for extra protein- 26 grams for 150 calories. Score! I love the banana taste and the warm notes of cinnamon. This was a hit in my collagen cup recipes, and was the perfect addition for this week’s breakfast prep!
Whipped up these muffins in no time. All the ingredients went into my blender, and I poured them into muffin tins, baked, and they were good to go-thats my kind of recipe.
2 very ripe bananas
1/2 cup Vital Proteins Banana Cinnamon Collagen Whey
3/4 cup Almond Flour
3 tablespoons melted coconut oil
1 teaspoon baking soda
1/2 teaspoon cinnamon
sliced banana for topping, I also melted some dark chocolate to drizzle-totally optional, but totally recommended.
1. Preheat oven to 350.
2. Add all ingredients to a high-powered blender and blend until batter forms.
3. Divide batter into a silicon muffin tray, or a muffin tin lined with paper liners, I got 12 muffins out of the mix.
4. Bake for 20-25 mins, or until a toothpick is inserted into the middle and comes out clean.
5. Store in an airtight container, I keep mine in the fridge after day 2! Enjoy, Friends!
