When the sun stops shining 24/7, and it gets blustery outside, it takes everything in me not to crawl under a duvet & eat my weight in mac//cheese- together or separate.
Italian chicken sausage hash with butternut squash & pepperoncini’s.
1lb chicken sausage, I used Italian.
1lb diced butternut squash
3-4 small red potatoes, diced
1/2 cup of sliced pepperoncinis, juice included
1 tsp oregano
1 tsp parsley
1 teaspoon olive oil
S//P to taste
Slice your sausage into 2-3inch pieces. In a large skillet, add the olive oil & heat pan over medium-high heat.
Add sausage and let sit in pan 5ish mins till a nice brown crust develops on one side.
Flip them over, and add squash//potatoes to pan.
again, let sit for another 5 mins, and begin to stir potatoes around.
Once potatoes//squash are tender, season wth salt & pepper, and add the peppers with the juice.
Reduce heat to low, sprinkle with fresh parsley, & DIG IN! I serve mine with a big tossed salad!
